Winemaker Steve Beckmen shares his tasting notes over two consecutive days:
Day 1: Intense, complex aromas of mint, lemon verbena, candied lemon, and lime are very outgoing. The mouth is intense with good weight, good acidity, and firm tannins creating a juicy quality, with flavors of lemon, lime, grapefruit, and peppery spice. The finish is long and juicy with tart fruit and spices that linger. This is serious Sauvignon Blanc!
Day 2: The wine opened up to reveal more fruit than day 1 with apple, citrus, tarragon, white flowers, and mineral. Still intense but has mellowed a bit in the mouth with powerful structure, acid, and tannins framing the flavors of citrus fruits, spice, green apple, mineral, and saline finishing long and juicy. Really awesome on Day 2!
