Rich and intense, the 2021 Estate Cabernet Sauvignon displays lifted aromas of red and blue fruits, chocolate, sage, and earth. The lift carries through on the palate with more intense red and blue fruits, chocolate, bay leaf, and dried herbs flavors that are framed nicely by the tannins and acidity that carry the flavors on the very long finish. Definitely young and in need of some short-term cellaring, the 2021 will drink beautifully from 2025-2040.

The 2021 Cabernet Sauvignon Estate Los Olivos District is packed with dark blue/purplish fruit, lavender, cloves and crushed rocks. Sinewy and structured, with plenty of persistence, the 2021 is super-expressive in this tasting. Time in the glass brings out floral overtones and a slightly redder fruit profile that is quite appealing. Harvest took place on October 20 and 21 — in other words, very much on the late side. Drinking Window 2024 — 2036.

Hints of dark chocolate and tar meet with cocoa dust and rich, dark berries on the layered nose of this bottling. There is a firm tension to the sip, where the bound-up flavors of elderberry and blackberry slowly emerge from the charcoal and uncracked peppercorn base.
